1 - deep dish pie shell
8 - large apples or 12 small apples or more - prefer Johnathan - or Jonagolds (any sweet apple)
granulated sugar (little)
ground cinnamon
butter - few pats
Pre heat oven to 400 degrees
Pre-bake the pie crust for about 5 - 8 minutes.
Reduce heat to 350 degrees
Peel the apples.
Grate 1 apple at time using a coarse grater. - I use an old fashioned box grater.
Gently squeeze some of the juice out until it is not dripping
(Save the juice to drink later... it is delicicious. )
Put grated apple in the pie shell... about 3 apples per layer.
Sprinkle some cinnamon, and a very light dusting of granulated (regular) sugar
Repeat 2 more layers until apples mount up fairly high. - 2.5 inches above the rim of the pie shell.
On the top layer add the cinnamon and a couple pats of butter (about 5) - NO top crust.
Bake in a pre heated 350 degree oven for approximately 60 minutes.
