HOLIDAY GREEN SALAD

Ingredients:
1 6 oz. box lime (or cherry) Jello
2 cups boiling water
1 cup miniature marshmallows (I often add an extra ½ cup)
1 8 oz. Pkg. Cream cheese, softened and cut into ½ -3/4”cubes
1 cup Miracle Whip Salad Dressing
1 cup crushed pineapple, drained (I often add an extra ½ cup)
1 cup heavy cream, whipped
Directions:
Pre-chill a small mixing bowl in fridge or freezer for whipping the cream.
In a 9x13” glass dish, dissolve Jello in boiling water.
Working quickly while water is still hot, add marshmallows and stir.
(You want them to begin to soften and dissolve a bit.)
Add cream cheese and salad dressing.
Stir together. Let cool completely.
Meanwhile, in chilled bowl with a mixer on high speed, whip heavy cream to soft peaks.
When jello mixture is cool:
Stir in drained pineapple.
Fold in whipped cream.
Cover with plastic wrap or lid.
Refrigerate until set – preferable overnight.
Notes: This recipe can be halved.
You can substitute sugar-free Jello and Lite salad dressing and non-fat cream cheese to reduce calories.
